why we can't be immortal:

There is a rush, a "high", if you will, to cheating death. Part of it is egotistical, knowing you can do something that nobody else can. But the pleasure still lasts through those long, lonely periods when there are no witnesses to your greatness. The pleasure then is purely internalized; the immortal not only takes pride in his longevity, but also in his independence from those secondary emotions that are merely products of interactions with lesser beings.

The greatest pleasure comes from surmounting the greatest difficulties. To bury your children, and childrens' children. To watch the living world burned to ash and blown away, the stars sundered from their constellations and disappearing into the distance one by one until there is absolutely nothing left in the observable universe except for the darkness, and your mind . And not just to experience these tragedies once, but infinitely many times. And to anticipate the inevitable return of all you loved. To seek and desire ways of passing the times between just a few billion years faster.
Yes, there is great satisfaction and self-import in such an existence.

It is a hypothetical thought experiment; "eternal life" after death (i.e., Heaven) would be meaningless.
You wouldn't need to eat food because you're immortal. You wouldn't need to sleep because you're immortal. You wouldn't need to urinate/defecate because you're immortal.
So you'd never feel hungry or thirsty (and consequently would feel no satisfaction from eating/drinking), you'd never feel tired, and you'd never feel the satisfaction of taking a dump.
Also, the only reason we search for things like power and knowledge is in hope that they will prolong our own life; so the pursuit of power and knowledge would also be meaningless for the immortal.
One could argue that sex would still feel pleasurable, as the sex drive is rooted not in self-perseverance but the creation of new life - spreading our DNA. But how would sex for an immortal person feel? They wouldn't feel exhausted/relieved after sex, because they're immortal.

all these books are exactly the same plot
blank slate of a guy, make him vague and with out personality so the pre-teen girl can paint what ever they want on him
girl with low self esteem is thrown into some situation with the guy and she falls in love and this relationship boosts her self esteem and she ends up in a better place in the end now that she has found true love
