I had a 1 gallon batch that I let age about a month and I just tasted it tonight and it REALLY smells and tastes like apples.
It tastes and smells way better than it did when I first racked it after primary fermentation.
It's still tart and not very sweet, but I don't mind much, it's about 6% and it does the job.
I'm racking a larger 5 gallon batch in the morning and it should be about 8%. I'll let you know how it tastes!

I consider Massachusetts like 11 steps towards fascism. The state motto is "The Spirit of America" yet they have the most restrictive gun laws of any state, and also FIREWORKS ARE ILLEGAL. AMERICA MY ASS. THANKS A LOT MASSACHUSETTS.
