I've played a few hundred hours of skyrim and never encountered an unbeatable enemy...

Alduin on master difficulty at level 20 is, simply put, impossible.
He will recover health faster than you can take it away from him. Even if you blow your entire mana pool on the highest damaging spell you have available, this will barely make a visible dent in his health, and he will recover it a few seconds later.

what people say here have little to no effect on me i dont know where youre getting your sources from,
