elz is called aspic
actually aspic is liquefacted meat, usually used as the "gravy" in wet pet food
this was just straight up beef fat & grease that forms at the top of the pot, and i picked it off before warming it

i think you're right, from wikipedia it talks about gelatinized meat stocks
Aspic is a dish in which ingredients are set into a gelatin made from a meat stock or consommé. Non-savory dishes, often made with commercial gelatin mixes without stock or consommé, are usually called gelatin salads.

hot milk always seperates when i heat it on the stove and its a bitch to clean

the trick is to heat it on a low-medium heat while stirring; it only separates when it boils. personally i can't stand reheating coffee or anything in the microwave it still comes out all tepid and gross
