your games will be exactly the same with either CPU choice -- even if you're recording or livestreaming -- because the difference in performance from those two is negligible, they're the #1 and #2 options (probably the extreme edition will output more than 2x the heat, though, because its rated at a much higher wattage)
however
the vidya games will be noticeably smoother/faster with two cards in SLI configuration than they would be with only one, full stop, independent of your CPU choice. they also each do less work, individually, resulting in reduced heat output and longer life
which reminds me you better buy enough 120mm case fans and measure the airflow
picking a CPU for game performance is a question of getting one "good enough" and anything near 3 ghz with 4 cores is already more than directx/opengl can make use of, more = nothing in this case
video card selection makes all the difference here: SLI works with 2, 3, or 4 video cards, and each step up in the number of cards you buy is a measurable improvement, more = has value
2 is a fuckton better than 1
3 is kind of better than 2
4 is ever so slightly better than 3
