The folks at Kiplinger have a list of the worst values in college majors just as co-eds are settling into their dorms.
"Anthropology" tops the list, with an unemployment rate of more than 10-percent for recent grads. The median salary for those who do get jobs is $28,000.
Anthropology majors are also more than twice as likely as the national average to take a job in retail. That's followed by majors in fine arts, film and photography, philosophy and religious studies, and graphic design.

i think its because a lot of the art institute students find out that their degree won't get them a job anywhere, so they look back and see that they are actually only a few credits away from a degree in graphic design so they go grab that, and there's just too many people with degrees in graphic design.
Also, a lot of companies are turning to stock image producers who come out with generic images that can be used for virtually any company's website frontpage - this means one less person they have to give a salary to, and less jobs for graphic designers.

I blame grammar school and uplifting children's programming. we tell these kids they can be anything they want to be and to follow their dreams so a bunch of them decide they'd like to draw pretty pictures all day and $100,000 later they're flipping burgers.
