should I get the Intel Core i7 3930K 6-cored Processor 3.2GHz (Overclocked to up to 4.4GHz) instead of the Intel Core i7 3970X 6-cored Processor 3.5GHz (Overclocked to up to 4.8GHz) "Extreme Power" since its £399.00 cheaper and marks said I shouldnt overlock it that much, oh god I am scared of computers

you shouldn;t overclock it at all. you can ask them to set it or you can do it yourself if you're comfortable futzing around in the bios
